Pasta: a study in timing

thyme, oregano, savory & rosemary from the garden and a shallot to start.
with crimini mushrooms and butter, slowly simmering. smells so good!



simple pasta dough of 2 cups flour / 3 eggs / salt. let sit for an hour & roll super thin.


soft cheese and parmesan with extra chopped herbs for filling, simply folded over to make loosely formed ravioli. in water for a few minutes and tossed into pan with mushrooms to brown for a little added texture.



and the extra dough cut into strips for linguini


for lunch tomorrow too!
